Almond and Blueberry Pancakes

During the week I like to have something quick and easy to eat for breakfast like a smoothie or coconut yogurt with granola and fruit, but when the weekend comes I tend to spoil myself and family with something a little bit more special. These pancakes are the perfect sweet treat to get your day started. I love blueberries in these pancakes but you could put whatever flavour combanation you like, raspberries also go great. The recipe serves two but can be easily doubled.
Ingredients:
1 cup almond meal
2 tbsp coconut flour
1 1/12 tsp baking powder
2 eggs
1/4 cup maple syrup
1/4 cup coconut milk
1/2 cup frozen blueberries
Toppings:
maple syrup
fruit- strawberries, blueberries, pomegranate seeds
sunflower seeds
edible flowers (optional, but are very pretty)
Method:
In a bowl combine the almond meal, coconut flour and baking powder, then add the remaining ingredients and stir until its combined. on a low-medium flame, heat a fryinpan (if its too hot the bottom will burn before its cooked through) depending on the size of your pan add full tablespoon amounts of the batter and lightly flatten in a circular motion. Cook on each side for 3 minutes. To serve place pancakes on your plates, top with the fruit, seeds and maple syrup and enjoy warm.
