Chocolate Ganache Tart

I try not to eat to many sweet treats, but when I do I like to make something really special and this tart is no exception. The crunchy base beautifully complements the rich indulgent chocolatey filling and makes for a perfect dessert. Take this to a dinner party and I promise everyone will love it and no one will have any idea its full of healthy, nutritious dense ingredients.

Ingredients:

base-

1 1/2 cup almond meal

1 1/2 cup coconut

1/2 cup cacao

1/2 cup maple syrup

1/2 cup coconut oil

ganache filling-

1 cup coconut oil

1 cup maple syrup

1/2 cup cacao

1/2 tsp salt

1/2 cup coconut cream

1/2 cup cacao nibs

Preheat the oven to 160 fan forced, and grease a large tart tin with coconut oil.

Combine all the base ingredients in a bowl until it all comes together. Place the mix into the tart tin and with your fingers spread it to cover the whole base, keeping it at the same thickness all the way around. Place a sheet of baking paper over the top with some pastry weights to ensure it doesn't rise. cook for 20 minutes, remove the paper and weights and cook for a further 10 minutes.

Remove from oven and cool completely on a cooling rack.

For the ganache, in a small saucepan combine the coconut oil and maple syrup, bring to the boil, remove from heat and add remaining ingredients stirring until its combined. Pour into the tart shell and refirdgerate after 1 hour sprinkle over the cacao nibs and leave to set overnight.
